Today Show Feature of Mariano's Game Day Dip
When it comes to watching your favorite sport on TV, having the right snacks is critical. We had the pleasure of joining the Today Show to feature a hot chicken dip enjoyed by Mariano and his wife.
The not-so-secret ingredient is Mo's Heat, giving the recipe an extra kick and flavor that everyone in the Riviera household loves. Try it for yourself!
Ingredients
- 1 pound poached chicken breast, shredded
- 4 ounces whipped cream cheese, softened
- 4 ounces sour cream
- 1/4 cup red onion, small dice
- 1/4 cup celery, small dice
- 1 cup seedless grapes, quartered
- 2 tablespoons of your favorite Mo's Heat hot sauce
- 1/2 cup chicken stock, at room temperature
- 2 tablespoons salt, added gradually, plus more to taste
- freshly ground black pepper, to taste
- packaged plantain chips, lightly crushed by hand
- micro cilantro, for garnish
- saltine crackers, for serving
Preparation
- Place shredded chicken into a large mixing bowl.
- Add the whipped cream cheese and sour cream. Using a spoon or rubber spatula, gently fold everything together.
- Add the diced red onion, celery and quartered grapes.
- Add the hot sauce.
- Gradually add the room-temperature chicken stock, while folding, until the dip reaches a creamy, scoopable consistency.
- Add the salt gradually, up to 2 tablespoons, then season to taste with additional salt, freshly cracked black pepper or hot sauce, as needed.
- Spoon the finished dip into a serving bowl. Take the packaged plantain chips and lightly crush them with your hands directly over the dip, allowing the pieces and crumbs to naturally fall across the top. Leave different-sized pieces for texture and crunch.
- Finish with micro cilantro scattered over and around the dip. Serve with saltine crackers on the side.
